Green Bowl

I love green!
In Bali i have tried a lot of green bowls with may different varieties. Everything you love is arranged in a bowl and wants to be eaten. Preferably with lots of protein. I'm showing you my favourite green bowl. It is not only so delicious but also made super fast.

Makes 2 portions.

Ingredients:
200 g kale
1 small onion
some vegetable broth
200 g natural tofu
3 tbsp. soy sauce
2 tbsp. olive oil
1 glass white beans
2 tbsp. pesto verde
80 g salad
50 g strawberries
1 avocado
lime juice
olive oil
salt, pepper
pistacios

Wash kale, pick in small pieces and cut off the stem. Cut onion into cubes and stew everything with some olive oil. Pour vegetable broth on it (50-100 ml) and cook it with closed lid for about 10 minutes.
Cut tofu into slices and marinate in soy sauce 5-10 minutes. Roast the sticks in a lot of olive oil.
Drain off the bean water and wash the beans. Mix them with the pesto. I like to sprinkle it with some lime juice. Flavour it with salt and pepper.
Wash and cut salad and slice the strawberries.
Dress everyting on a plate and make a vinaigrette out of olive oil, lime juice, salt and pepper. Serve together. Enjoy!
